Sally — It shouldn’t be a problem to let it rest in the fridge overnight or even up to a day.I’m convinced the sinking crumbs issue is caused by one of 3 reasons: 1) the batter was overbeaten; 2) the amount of flour is off – I recommend weighing the cake flour in this recipe rather than measuring the volume in cups; 3) the oven temperature is off – if the oven temperature is too low, the cake will not set properly and the heavy crumbs will sink.I did it! divided the recipe by 9, multiplied by 6.
