Also heat 1 cup water.It’s like 30 years old.These cookies were so so good!I was lucky enough to eat some of these babies made by Si herself!I agree they are totally different from the tried and true cookies which I think are the best chocolate chip cookies in the world!Si is a cookie master.I really liked the flavor of the chocolate from Trader Joes.Not only was there a lot of chocolate but it was really yummy chocolate.It was a totally new experience having so much chocolate in a cookie, yum!!!Also the cookie had a perfect balance of salt and sweet.Delish!I think if I had to pick a winner I’d say my favorite is still Si’s tried and true chocolate chip cookies.You just can’t beat them!I will definitely be adding these New York cookies recipe to my list of favorites though!Thanks for all the thorough information Si, I feel like I learned a lot about cookie making while I was reading.

Hi Penny, using whole wheat flour will typically create a denser bread, especially if you use all whole wheat flour.(If at any point the dough starts to smell scorched, lower the heat a bit.) Remove the bread with a spatula or tongs and cool on a rack for at least 30 minutes before slicing.(It was about 1 1/3 cups of liquid.) I also ground my own flour, using Sonora White wheat, as during this Coronavirus time even here in North Dakota where loads of wheat is grown, it’s a little challenging to find flour, especially organic flour, to purchase.

I do think I'll try the mix and overnight rise method for my ciabatta next time--I'm not satisfied with my process and think this might be a good method to adapt to rustic breads.Over the past few weeks, I’ve made several no knead breads in a cast iron dutch oven.

Some people are saying that they have done that, too.It looked,felt,smelled and sounded beautiful,but had no flavor and was quite sticky inside,uniformly sticky all the way out to right near the crust.In increased quantity it rose higher to become rounder.

It baked perfectly in 65 minutes.Pumpkin w/ butterscotch or white chocolate are the exceptions for me.

I did leave it in a bit longer since the crust color wasn’t as dark as previous loaves after 10 mins uncovered.Brush each pretzel with the egg wash.Seriously no muss no fuss.

So PROVE “whoever”INVENTED the recipe.The recipe is a no brainer.This pumpkin bread is almost perfect, but I had to tweak.
